Overview
Purple sage combines splendidly with onion to make stuffings for rich meat dishes. It’s also great in home-made sausages where its peppery flavour adds a delightful kick.
To enjoy the best flavour, pick the leaves before the plants begin to flower. They will keep fresh for up to a week in an airtight bag in the fridge and can be dried for storage in a jar.
Planting: Best grown in a light, well-drained soil in full sun or light shade. Water thoroughly before planting approx. 50cm (20ins) apart. Keep moist until established.
